2 egg whites
1 shredded courgette
1 cup of frozen or fresh spinach (I used frozen)
100ml of almond milk
Method of Preparation
First cook the spinach. If you choose the frozen spinach, you can put on the microwave for about 3 minutes and drain all the water.
Pre heat oven- 220 degrees
Mix the eggs, whites, courgettes, spinach with a fork like you would for an omelette. Add the milk, salt, pepper and oregano and place on a casserole dish.
Throw in the oven for 10-15 minutes.
Great Source of Protein, fats and less than 10g of carbohydrates for the whole dish! Loads of fiber and iron from spinach and egg yolk.
